Spaghetti Amatriciana

Ingredients for 2 servings:

  • 300g spaghetti
  • 150 g bacon
  • 80 g onion(s)
  • 1 small can of tomatoes, chopped
  • 1 garlic clove(s)
  • 1 small pepper
  • some cane sugar
  • 1 tsp, heaped tomato paste
  • some broth
  • salt and pepper
  • Paprika powder, hot
  • Pizza seasoning
  • basil
  • Parmesan, freshly grated
  • possibly balsamic vinegar, red

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Spaghetti with a bacon, onion and tomato sauce

Finely chop the bacon, onion, garlic clove, and chili peppers. Melt the brown sugar in a hot pan, then fry the tomato paste. Add the bacon and onion. When the onion has browned, add the garlic, chili peppers, and canned tomatoes. Add salt, pepper, paprika, and pizza seasoning. Bring to a boil briefly, then add enough broth until the sauce has a runny consistency. Then let it simmer in a covered pot for 30 minutes at 80°C. Let it thicken for another 20 minutes with the lid open. The sauce should have a thick consistency. Taste again and adjust seasoning if necessary. (I add a few drops of red balsamic vinegar to the sauce.) Meanwhile, cook the spaghetti in salted water until al dente and drain. Serve the spaghetti on warmed plates. Pour the sauce over it and sprinkle with basil and Parmesan cheese.
