Spaghetti Carbonara

Ingredients for 2 servings:

  • 250g spaghetti
  • 2 eggs
  • 1 egg yolk
  • 2 slice(s) bacon, Italian (guanciale) or pancetta
  • 30 g Parmesan or Pecorino
  • n. B. salt and pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Italian style

Heat 2.5 liters of water with salt. Once boiling, add pasta and cook according to package instructions (approx. 9 minutes). Meanwhile, dice the bacon (guanciale or pancetta is best, but other streaky bacon will also work) and fry in a large pan with a little olive oil. Then, in a bowl, mix 2 eggs and 1 egg yolk, add the cheese, and season with salt and pepper. When the pasta is ready, add it directly to the pan with the bacon and remove from the heat. Mix everything well and add the egg mixture. Mix everything again until the egg mixture is creamy, but do not let it curdle. Just add a little pepper. Done.
