Ingredients
 

  • 150 g Soy noodles
  • 3 Egg
  • 100 g Low fat quark
  • 100 g Grated Parmesan
  • 100 g Parma ham slices

Instructions
 

  • Spread the ham slices evenly on a baking sheet and bake in the oven at 160ºC until lightly crispy.
  • Put on the pasta water with a pinch of salt.
  • Put the egg white and egg yolk in a heat-resistant round bowl and mix with the quark and Parmesan to a smooth mixture.
  • Add soy noodles to the boiling water.
  • Carefully heat the carbonara mass over the simmering pasta water, stirring constantly.
  • Mix the pasta with the carbonara in the bowl and season with salt and pepper.
  • Crumble the crispy ham slices over the pasta.
