Spaghetti Carbonara (Michael)
The perfect spaghetti carbonara (michael) recipe with a picture and simple step-by-step instructions.
- 500 g Spaghetti
- 200 g Pancetta belly bacon
- 2 piece Garlic cloves
- 4 tbsp Olive oil
- 2 piece Eggs
- 2 piece Egg yolk
- 100 g Parmesan
- Salt
- Black pepper from the mill
- Boil the spaghetti in salted water until al dente. Dice the pancetta, peel the garlic cloves. Heat the olive oil in a pan, sweat the garlic for about two minutes until golden brown over medium heat, then remove and fry the pancetta in the oil until crispy.
- Whisk the eggs in a large bowl and mix with the cheese. Add black pepper.
- Remove some pasta water from the pasta and drain the spaghetti. Immediately add to the eggs in the bowl, fold in with two large forks and add the pancetta and the garlic oil from the pan. If the ingredients are difficult to mix, stir in a little pasta water. But no cream, please!
