Ingredients for 4 servings:
- 500g spaghetti
- 400 ml coconut milk
- 1 bunch of spring onions
- 1 small onion(s)
- 1 avocado(s)
- 2 small chili peppers
- 10 king prawns
- 350 g chicken breast fillet(s)
- 100 g broccoli
- 1 tbsp peanut butter
- 1 tbsp, heaped chili (chili pickle)
- 1 tsp curry paste, green
- 1 pinch(s) of salt and pepper
- 1 pinch(s) of cayenne pepper
- some oregano
- some basil
- some garlic powder
- e.g. Parmesan
- Rapeseed oil for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Exotic delicacy from cocoslocos
Cook the spaghetti according to the package instructions. Peel and pit the avocado. Finely chop the chicken breast fillets, onion, and spring onions. Chop the chili peppers. Heat the rapeseed oil in a pan. Sauté the onion and spring onions. Add the sliced chicken breast fillet. Add the avocado, broccoli, king prawns, and chopped chili peppers. Then add the coconut milk and peanut butter. Season with chili pickle, green curry paste, and spices. Simmer on low heat for 10 minutes. Sprinkle with Parmesan cheese, if desired.
