Ingredients for 4 servings:

  • 100g spaghetti
  • 1 egg white
  • 4 eggs (quail eggs)
  • salt and pepper
  • Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook spaghetti in salted water according to the instructions, reducing cooking time by 1-2 minutes. In the meantime, butter 4 baking dishes and toss with freshly grated Parmesan cheese. Drain the spaghetti and toss it in a bowl with the egg whites, then immediately transfer the mixture to the baking dishes (turning). Make a small indentation in the center and place a quail egg in it. Bake in a preheated oven (200°C) on the top rack for about 15 minutes, until the egg is set. Remove the nests from the dishes with a tablespoon, sprinkle with freshly ground black pepper, and serve.
