Spaghetti salad with curry

Ingredients for 6 servings:

  • 500 g whole wheat spaghetti
  • 450 g bell pepper(s)
  • 400 g meat sausage
  • 100 g spring onions
  • 1 tbsp curry powder
  • 3 tbsp sugar or erythritol
  • 5 tbsp soy sauce
  • 5 tbsp rapeseed oil or sunflower oil
  • 5 tbsp lemon juice
  • 3 tbsp, heaped parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Cook spaghetti as usual until al dente, or slightly softer if you prefer. Immediately after cooking, rinse spaghetti with cold water. Mix soy sauce, sugar, oil, lemon juice, and curry powder in a bowl to make a sauce. Finely chop the bell peppers, spring onions, parsley, and sausage and add to the sauce. Add the spaghetti to the sauce and mix well. If possible, let the salad stand for at least half an hour, stirring occasionally.
