Spaghetti with anchovies

Ingredients for 2 servings:

  • 200g spaghetti
  • 50 g butter
  • 1 small jar of anchovies
  • 2 cloves garlic
  • 1 can of tomatoes, chopped or whole peeled
  • 1 bunch parsley, flat
  • salt and pepper
  • olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Quick and easy

Cook the spaghetti according to the instructions until al dente, reserving some of the pasta water when draining. Meanwhile, melt the butter in a pan and add the anchovies. Stir well until the anchovies break down, about 5-10 minutes. Crush the garlic cloves and add them. Add the canned tomatoes, salt, and pepper, and let them reduce, about another 10-15 minutes. Fold in the spaghetti and let it simmer for another 2 minutes. Roughly chop the parsley, leaving a few stalks on. Fold in, mix well, and serve immediately. The parsley shouldn’t get too soft. Drizzle with a few drops of good olive oil. Ideal hangover food!
