Ingredients for 4 servings:
- 350g spaghetti
- 7 tbsp olive oil
- 80 g bread(s), stale, hard
- 1 clove(s) garlic
- some salt and pepper, freshly ground
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cook the spaghetti according to the package instructions until al dente, drain, and reserve the pasta water. Crumble the stale bread using a coarse grater. A food processor also works. Peel and mince the garlic. Heat the oil in a large pan and fry the breadcrumbs and garlic until almost browned. Add the spaghetti and a few tablespoons of the pasta cooking water. Season with a little salt and a good grind of freshly ground pepper and sauté briefly. If the spaghetti is too dry, add a little more of the pasta cooking water to soften everything.
