Spaghetti with oyster mushrooms

Ingredients for 2 servings:

  • 200 g king oyster mushrooms, small
  • 75 g ham (salmon ham)
  • 1 tbsp olive oil
  • 125 ml vegetable or meat broth
  • Salt and pepper from the mill
  • 100 g cream cheese
  • 1 tsp cornstarch
  • 300g spaghetti
  • salt water
  • 1 tbsp butter
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Brush the king oyster mushrooms and cut into pieces, leaving the smaller mushrooms whole. Dice the ham, fry in hot oil, and add the mushrooms. Mix the cream cheese with the broth and cornstarch, season well, and add to the mushrooms. Bring to a boil over low heat, stirring constantly. Cook the spaghetti in plenty of salted water until al dente and drain. Finely chop the parsley and add it to the mushroom sauce. Melt the butter, toss the spaghetti in it, and serve with the mushroom sauce.
