Spaghetti with red onions

Ingredients for 4 servings:

  • 500 g red onion(s)
  • 1 tsp thyme, picked leaves
  • 1 red chili pepper(s), dried and crushed
  • 4 tbsp olive oil
  • salt and pepper
  • 200 ml Marsala
  • 500g spaghetti
  • 40 g butter
  • 40 g Parmesan
  • 100 ml vegetable stock

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and slice the onions. Sauté in olive oil with thyme and chili, season with salt and pepper. Deglaze with Marsala wine and then add the vegetable stock. Cover and simmer over low heat for about 15 minutes, then season to taste. Cook the pasta in salted water until al dente, drain, and toss with the butter and onions. Sprinkle with grated Parmesan cheese.
