Spaghetti with Rocket, Tomato & Thufish
The perfect spaghetti with rocket, tomato & thufish recipe with a picture and simple step-by-step instructions.
Sauce:
- 1 tsp Salt
- 2 tbsp Extra virgin olive oil
- 50 g Dried tomatoes
- 1 size Fresh tomato
- 2 Shallots
- 2 Garlic cloves
- 2 tbsp Rocket pesto see my KB
- 2 Handful Arugula
- 2 Handful Garlic pepper from my KB
- Telly cherry pepper
- Italian herbs
- 1 shot Vinegar
- 1 pinch Sugar
- 1 small Drained canned tuna
- Freshly grated Parmesan
- 1 Creator Pasta water
- Cook the spaghetti in salt water all dente according to the instructions on the packet!
Sauce:
- Meanwhile, coarsely chop the dried tomatoes, wash the tomatoes, remove the stalk and also dice. Peel shallots and garlic, finely dice shallots and press garlic. Sort the rocket, remove the stalk, wash and spin. Drain the tuna (in its own juice)! Wash and chop herbs.
- Heat the olive oil in a pan and roast the shallots / garlic in it, then add both types of tomatoes and fry for about 5 minutes. Then comes vinegar, sugar, garlic pepper, pesto, fresh herbs and pepper.
- Sieve the pasta and collect some pasta water! Rinse the pasta briefly and put it back in the pot. Now add the sauce and pasta water and mix everything well. Possibly season again! Finally fold in the rocket and tuna!
