Spaghetti with sardines

Ingredients for 1 servings:

  • 100g spaghetti
  • 125 g sardines in tomato sauce, from the can
  • 12 small olives
  • 50 g tomatoes, pureed
  • 1 heaped tsp Pesto alla Genovese
  • 1 garlic clove(s)
  • 3 tbsp extra virgin olive oil
  • oregano
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Bring a pot of heavily salted water to a boil. In the meantime, put a pan (preferably a ceramic one) on the heat. Add a little water, passata, Pesto alla Genovese, the fish, and the halved olives to the pan. Then press in the garlic and season the sauce with pepper and oregano. When the water boils, add the spaghetti and cook for 7-8 minutes. While the spaghetti is cooking, gently heat the sauce with the fish in the pan. Once cooked, transfer the spaghetti to a plate and place the fish from the pan on top of the spaghetti. Then add 4 tablespoons of the cooking water to the sauce and pour the sauce over the fish and pasta. Pour on a good drizzle of extra virgin olive oil.
