Spaghetti with tomato and mozzarella

Ingredients for 4 servings:

  • 500g spaghetti
  • salt water
  • 2 balls of mozzarella
  • 3 large tomatoes
  • 150 ml balsamic vinegar
  • 2 small onions
  • 4 basil leaves
  • salt and pepper
  • 2 tbsp olive oil

Cook the spaghetti in salted water until al dente. Meanwhile, halve the onions, slice them thinly, and place them in a bowl. Dice the tomatoes and mozzarella and add them to the bowl. Chop the basil leaves and add them. Now drizzle the balsamic vinegar and olive oil over the ingredients, season with salt and pepper, and mix well. When the spaghetti is cooked, drain well, add to the bowl with the remaining ingredients, and mix well. Tastes great when the spaghetti is still slightly warm. Once cooled, it also makes a delicious pasta salad, perfect for grilling, for example. However, it should be served fresh, as the pasta swells a lot after a while in the vinegar, and the dish then loses its flavor.
