Spaghetti with tomato – avocado – salsa

Ingredients for 4 servings:

  • 500 g pasta (spaghetti)
  • 5 tomatoes (vine tomatoes)
  • 1 avocado(s)
  • 2 cloves garlic
  • 1 small onion(s)
  • 1 tbsp coriander, freshly chopped
  • 3 tbsp olive oil
  • 1 lemon(s) (squeezed juice)

Spaghetti Messicana

Peel and dice the tomatoes, peel, pit, and finely dice the avocado, finely chop the onion, and finely chop the garlic. Mix everything with the oil and lemon juice. Season with coriander, a little salt, and pepper, and let it marinate in the refrigerator. Meanwhile, cook the spaghetti until al dente. Mix with the warm spaghetti in a large pasta bowl and serve immediately. Serve with white bread and a delicious wine.
