Spaghetti with tomato curd

Ingredients for 2 servings:

  • 250g spaghetti
  • salt water
  • 250 g low-fat curd cheese
  • 1 onion(s)
  • 1 clove(s) garlic
  • 30 g Parmesan
  • 500 g tomatoes, pureed
  • 1 tbsp oil
  • 1 small bunch of fresh basil
  • salt and pepper
  • possibly sugar

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat the oil in a pan, finely dice the onion and garlic, and sauté. Remove the pan from the heat, add the passata and low-fat curd cheese. Mix everything well and season with salt and pepper. If desired, add a pinch of sugar. Then return the pan to the heat and heat the tomato curd on low heat. Cook the spaghetti according to the package instructions and your personal preference, then drain and add to the pan with the tomato curd. Mix everything well. Tear the basil into small pieces and stir it in. Divide everything among the plates and, finally, sprinkle with Parmesan cheese and garnish with a few basil leaves and serve immediately. Tip: If you like, you can also stir in a can of tuna in its own juices. This also tastes delicious.
