Ingredients for 1 servings:

  • 75 g pasta (wholemeal spaghetti)
  • 1 tbsp olive oil or rapeseed oil
  • 1 small onion(s), chopped
  • 1 clove(s) garlic, squeezed (according to taste)
  • 1 beef tomato(s), peeled, diced
  • 1 zucchini, diced
  • 1 tbsp tomato paste
  • salt and pepper
  • 1 tbsp Parmesan, grated
  • 100 g lettuce
  • basil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook pasta according to package instructions until al dente. Sauté garlic and onion in hot oil, add zucchini cubes, stir in tomato paste. Stir in tomato cubes, season, and simmer covered for about 5 minutes. Serve pasta with sauce and Parmesan cheese. Serve with salad. Approx. 48 g carbohydrates (4 BU). Onion, garlic, tomato, tomato paste, zucchini, and lettuce contain non-blood sugar-affecting carbohydrates.
