Spaghettini with tomato and feta sauce

Ingredients for 3 servings:

  • 300 g spaghetti (thin spaghettini)
  • 300 g feta cheese
  • 350 g tomatoes, pureed
  • 1 bunch basil, fresh
  • 8 fresh mint leaves
  • 2 garlic cloves
  • 1 piece(s) Parmesan
  • pepper
  • 3 tbsp olive oil
  • Cayenne pepper
  • 3 tsp cream cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the garlic and basil. Heat olive oil in a pan and sauté the garlic and basil. Dice the feta. Add the tomatoes and about 2/3 of the feta. Simmer gently until the feta has dissolved. Meanwhile, cook the pasta until al dente. Grate the Parmesan cheese and add it to the sauce. Season with pepper and cayenne pepper. Add the cream cheese. Transfer the pasta to the plates and top with the remaining feta. Pour the sauce over the pasta and garnish with the sliced ​​mint leaves.
