Ingredients for 4 servings:

  • 300 g potatoes, boiled
  • some oil for frying
  • salt and pepper
  • Paprika powder, sweet
  • 3 m.-sized eggs
  • 150 g Cheddar cheese, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Delicious and light, quick and easy to prepare. Enjoy hot or cold, also ideal for parties!

Cut the cooked potatoes into small cubes, approximately 1.5 x 1.5 cm in size. Heat a little oil in a 20 cm frying pan and add the diced potatoes. Season with salt, pepper, and sweet paprika, and fry. Beat the eggs in a separate bowl, season with salt and pepper. Then pour over the fried potatoes and sprinkle with cheese. Cover and let the tortilla set over low heat for about 12 minutes before turning it out and serving. Enjoy the tortilla hot or set aside to cool; it also tastes great cold. Tip: For a variation, fry onions and/or bacon together with the potatoes.
