Ingredients for 8 servings:
- 6 tbsp paprika powder, sweet
- 2 tbsp paprika powder, hot
- 2 tbsp pepper, freshly ground
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 800 ml fresh orange juice
- 300 ml whiskey (e.g. Jack Daniels)
- 400 ml ketchup
- 2 tbsp Worcestershire sauce
- 6 tbsp rub
- 6 tbsp honey
- 6 tbsp brown sugar
- 900 ml BBQ sauce (e.g. Old Texas BBQ Sauce – Original)
- Tabasco or chili to taste
- 7 kg spareribs (e.g. Iberico spareribs)

It’s best to prepare spare ribs the night before: Be sure to remove the silver skin on the back of the spare ribs beforehand, for example using the handle of a spoon to lift it up. To prepare the rub: Put all the ingredients in a mortar and pestle and grind them lightly (the rub will keep in a jar for several months). Rub the spare ribs on both sides with the rub and place them in a covered roasting pan in the fridge overnight. This way the spare ribs will marinate nice and dry. The salt doesn’t draw any moisture out of the meat! The spare ribs are always very juicy and delicious. Save 6 tablespoons of the rub for the sauce! To prepare the spare ribs: Take the spare ribs out of the fridge and, covered, put them in the roasting pan on the lowest rack in the oven at 120°C (top/bottom heat). The spare ribs can braise there for 6 hours. This makes the ribs incredibly tender and fall off the bone. The spare ribs can be stacked in the roasting pan without any problem! The fat can slowly separate and drip onto the other ribs, allowing them to marinate continuously and become really juicy. At the end, the spare ribs can be browned using the grill function if desired. Preparation of the sauce: Bring the orange juice, Worcestershire sauce, whiskey, and brown sugar to a boil in a saucepan or high-sided frying pan and reduce until only about half remains (simmer for about 20 minutes). Then stir in the remaining ingredients and simmer for another 20 minutes. Season the sauce to taste with Tabasco, chili, etc., depending on your desired spiciness. Serve the sauce separately and pour it over the spare ribs on the plate. This ensures the spare ribs are crispy, juicy, and have the wonderful flavor of homemade BBQ sauce.
