Sparkling wine pomegranate sorbet

Ingredients for 5 servings:

  • 360 ml sparkling wine
  • 200 g sugar
  • 420 ml pomegranate juice
  • 1 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 40 minutes

Heat the sparkling wine with the sugar, then bring to a rolling boil while stirring, ensuring the sugar has completely dissolved. Remove the pan from the heat, add the pomegranate juice and lemon juice, and mix. Then refrigerate the liquid for 3-4 hours to chill completely. Now pour the liquid into the ice cream maker for about 30-40 minutes, until it’s firm enough to handle. Then transfer it to the freezer.
