Spätzle pan with minced meat and cucumber

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 onion(s)
  • 1 cucumber(s)
  • 400 g Spätzle, ready to fry
  • 200 g cream cheese
  • 2 tbsp ajvar
  • 1 tbsp mustard (Dijon mustard)
  • 50 g butter or oil for frying
  • salt and pepper
  • some cream or vegetable stock if needed

simple, quick and delicious

Peel and finely dice the onion, and sauté in a large, deep pan or saucepan with a little oil or butter. Add the minced meat, season with salt and pepper, and fry until crumbly. Peel the cucumber and cut into sticks or cubes. If you’re not using fresh spaetzle, prepare them according to the package instructions. Now add the cucumber sticks and spaetzle to the minced meat and simmer for about 5 minutes, stirring frequently. Add the cream cheese, ajvar, and mustard and heat back up. If the mixture becomes too dry, add a generous splash of cream and/or a little broth. Season to taste and serve. A dish that our little daughter also enjoys.
