Ingredients for 6 servings:

  • 90 g caramel candy(s) (cream caramel candy), soft
  • 400 g whipped cream
  • 10 spiced speculatius cookies
  • 1 egg(s)
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 30 minutes

Delicious Christmas or winter dessert

Finely chop the candies and slowly dissolve them in about 50g of whipped cream in a saucepan, stirring constantly. Finely chop 8 speculatius biscuits and stir them into the liquid cream and candy mixture. Beat the egg yolks with a hand mixer for at least 5 minutes until light and creamy. Then stir the cookie mixture into the egg yolk mixture. If there are any larger cookie pieces, crush them with a fork or stir until they are broken up. Whip the remaining whipped cream until stiff peaks form and fold in. Beat the egg whites and salt until stiff peaks form and fold in. Pour the mixture into a freezer dish, cover tightly, and freeze for at least 8 hours, or overnight is best. Remove the dish from the refrigerator 10 to 15 minutes before serving. Briefly dip in hot water if necessary, and then turn the parfait out. Finely crumble the remaining cookies and sprinkle over the turned-out parfait. Do not refreeze the thawed parfait! It can be prepared and frozen up to 14 days in advance, making it perfect for a Christmas menu. Serve with sour cherries, either hot or cold, or with cherry brandy, if you like, or hot raspberries.
