Ingredients for 1 servings:
- 300 g spelt flour (splenium flour)
- 400 g wholemeal flour
- 10 g salt
- 5 g dry yeast
- 5 g brown sugar
- 420 ml water
- some oil for the mold
Instructions
Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 40 minutes; Total time approx. 4 hours 55 minutes

Combine all ingredients to form a smooth dough and let it rest for 3 hours, covered with a dishcloth. Tip: The yeast rises better with warm water. Knead the dough gently again. Not too much, so it doesn’t collapse. Pour the dough into an oiled bread pan and let it rest for another hour. Preheat the oven to 220 degrees Celsius and add 500 ml of water to the bottom of the oven in an ovenproof bowl to make the bread moister. Bake for 40 minutes.
