Spelt Buckwheat Bread

The perfect spelt buckwheat bread recipe with a picture and simple step-by-step instructions.

  • 400 g Spelled flour type 1050
  • 100 g Buckwheat flour
  • 2 tsp Fine sea salt
  • 3 tbsp Grains to taste
  • 3 tbsp Herb vinegar
  • 500 ml Lukewarm water
  • 1 packet Dry yeast
  1. I baked this bread twice. Once with the specified ingredients, and then again for taste test purposes with half buckwheat and half spelled flour. The latter is even stronger in taste.
  2. Mix the flour, yeast, grains and salt well. Add vinegar and lukewarm water and stir everything into a paste.
  3. Put the dough in a bread pan, cover and let it rest for approx. 2 hours at room temperature.
  4. Preheat the oven to 200 degrees top / bottom heat and bake the bread on the second rack from the bottom for approx. 60 times.
