Quick 5 Minute Spelled Buckwheat Chia Bread

Ingredients
 

  • 300 g Wholemeal spelt flour
  • 200 g Buckwheat flour
  • 125 g Sunflower or pumpkin seeds
  • 20 g Chia seeds
  • 1 Msp Salt
  • 1 packet Dry yeast
  • 2 tbsp Apple Cider Vinegar

Instructions
 

  • Mix both types of flour, sunflower seeds, salt, chia seeds and dry yeast in a bowl. Stir in apple cider vinegar and 500 ml water. Knead briefly with the dough hook of the hand mixer to form a (relatively liquid) dough.
  • Pour the dough into a prepared loaf pan (greased and dusted with flour). Place in the still cold oven on the middle rack and only then heat to 200 degrees top / bottom heat. Bake the bread for about 1 hour. Check briefly whether the bread is ready, otherwise bake a little more. Then let cool down and then remove from the mold.
  • I usually bake double the portion right away so that I have two loaves of bread and then freeze one (cut into slices). Instead of buckwheat flour you can also use just spelled flour (500 g flour in total). For a delicious sandwich recipe take a look at my cookbook: Fried Egg Hummus Bread.
