Ingredients for 5 servings:
- 500 g spelt flour type 630 or type 812
- 350 g water, cold
- 16 g olive oil
- 10 g salt
- 6 g sugar
- 4 g fresh yeast
- Flour for the work surface
- Durum wheat semolina for the work surface
- sesame
- Black cumin
- arugula
- herb cream cheese
- cooked ham
- Goat cheese
- Mushrooms, fresh
Instructions
Working time approx. 30 minutes; Rest time approx. 14 hours; Cooking/baking time approx. 12 minutes; Total time approx. 14 hours 42 minutes
with rocket, goat cheese and fried mushrooms
For the dough, place the flour and water in a bowl. Knead with olive oil, salt, sugar, and yeast for 10 minutes. Let the dough rest at room temperature for one hour to allow the yeast to activate. Then fold the dough once, place it in a covered bowl, and let it rise in the refrigerator for 12 hours. During this time, fold the dough another 1-2 times. After the resting time, place the dough on a work surface dusted with flour and durum wheat semolina and cut off five equal pieces. Shape the dough into balls, flatten them, and roll them out lengthwise with a rolling pin to a thickness of about 1 cm. Let the flatbreads rest for another 30 minutes. In the meantime, preheat the oven to 230°C (fan oven). After the resting time, press the flatbreads several times with the handle of a wooden spoon or similar, spray with water, and sprinkle with sesame and black cumin seeds. Place in the oven and bake with steam for 12 minutes. Brush with a little olive oil immediately after baking. I like to use a perforated sheet pan to bake the flatbreads. A pizza stone or baking steel works just as well. However, a pizza peel is recommended in these cases. While the mushrooms are baking, clean and slice the mushrooms, then fry them in olive oil over medium heat. Season with salt and pepper. Finally, once the bread has cooled, slice them lengthwise and spread with herb cream cheese. Then top with arugula, ham, goat cheese, and the fried mushrooms, as desired. As a finishing touch, I like to place the sandwiches in the contact grill for another 2-3 minutes. This is not necessary, though. Note: Of course, the sandwiches can be topped with your own personal favorites.
