Spelt-rye bread according to a family recipe

Ingredients for 1 servings:

  • 1 kg spelt flour
  • 500 g wholemeal spelt flour
  • 1 kg rye flour
  • 8 tsp salt
  • 6 packs of dry yeast
  • 3 tsp sugar
  • 1.8 liters of lukewarm water
  • 4 tbsp apple cider vinegar
  • 200 g linseed, oat flakes, sunflower seeds, pumpkin seeds or similar.

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 30 minutes

Combine everything into a dough, cover, and let rise in one place for about 1 hour, then knead again by hand on the countertop. Repeat the kneading and rising process up to 6 times; the more often, the better the bread will be and the easier it will be to digest. Divide the dough into two large, greased, oat-sprinkled loaf pans (approx. 31 × 16 × 10 cm) and let rise, covering and reaching the edges. Bake the loaves for 1 hour at 190°C (fan oven).
