Ingredients for 1 servings:
- 1 cube of yeast
- 2 tbsp honey, or dandelion honey
- 2 tsp salt
- 500 g spelt flour or other flour
- 2 tsp bread spice mix
- 4 tbsp sunflower seeds
- 4 tbsp flaxseed, crushed
- 4 tbsp sesame seeds
- 2 tbsp bran (wheat bran)
- 1 tbsp low-fat curd cheese
- 500 ml water, lukewarm
- Fat, for the shape
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour
Combine the yeast, honey, and salt in a small bowl and let stand until the yeast has liquefied. Stir if necessary. Combine the sifted flour, seeds, bran, and bread spice in a bowl. Combine the water with the liquid yeast, salt, and honey mixture and the quark and add to the mixture. Using a wooden spoon, knead until a fairly smooth dough forms. Pour the dough into a greased loaf pan. The dough doesn’t need to rise. Preheat the oven to 180°C (350°F) for now. Bake the bread for 50-60 minutes. Add a cup of water to ensure it’s nice and crispy. Be sure to do the skewer test and perhaps leave it in the switched-off oven for a while until the dough is firm. Delicious with sweet or savory toppings.
