Ingredients for 2 servings:
- 1 bag of frozen vegetables (Italian vegetable stir-fry)
- 500 g potato(s), waxy
- 1 tbsp olive oil
- possibly spice(s), depending on taste
- Salt

tasty, inexpensive and fast
Place the frozen vegetables (no need to thaw) in a large bowl. Peel the potatoes, halve them, and slice them. Add them to the vegetables, add the oil, and mix everything well. Place the vegetable and potato mixture on a baking sheet lined with parchment paper and cook at approximately 200°C for approximately 30 to 40 minutes (pierce a potato slice occasionally). Caution! Since the vegetables are usually already heavily seasoned, I only add the oil first and adjust the seasoning as needed. The same applies to the salt. If you like, serve with herb curd cheese or tzatziki.
