Ingredients for 1 servings:

  • 4 m.-sized eggs
  • 250 g sugar
  • 250 g powdered sugar
  • 150 g butter, soft
  • 100 g hazelnuts, ground
  • 320 g flour
  • 200 ml milk
  • 20 g gingerbread spice
  • 3 tbsp cocoa powder
  • 3 tsp baking powder
  • 5 tbsp water, hot
  • pinch(s) of salt
  • 3 tbsp sugar sprinkles (sugar pearls)

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

with egg whites, cocoa, gingerbread spice, without honey

Preheat the oven to 200 degrees Celsius. Separate the four eggs. Beat the egg whites and a pinch of salt until stiff peaks form. Gradually add 100g of sugar to the egg whites using a hand mixer. Beat for another 2-3 minutes until stiff peaks form. Chill for 10 minutes. Beat the egg yolks and 150g of sugar until light and fluffy, then add the softened butter and beat for about 7-8 minutes until fluffy. Carefully combine the flour, ground hazelnuts, cocoa powder, gingerbread spice, and baking powder, then add the milk. Mix everything together and gradually add to the egg yolk and butter, stirring to combine. Then carefully fold in the stiff peaks, one spoon at a time. Spread the batter onto a greased and floured baking sheet, place on the lowest rack of the oven, and bake for 20-25 minutes. Test the batter with a rolling pin to check it’s done. Allow the sheet to cool completely. Mix the powdered sugar and hot water until smooth, spread it over the dough, and sprinkle with sugar pearls (golden or silver). Cut into pieces, e.g., diamonds or squares.
