The flat dough
- 200 g Spelled flour type 630
- 10 g Yeast fresh
- 1 pinch Sugar
- 3 g Salt
- 60 ml Lukewarm water
- 2 tablespoon Extra virgin olive oil
The topping

- 100 g Blue cheese
- 2 piece Fresh shallots
The flat dough

- Mix the flour and salt in a bowl, crumble the yeast in a hollow in the middle, add the sugar and mix with some of the water. Let this dough rest for about half an hour.
- Now knead in the remaining water and oil and make an elastic dough. (takes about 5 minutes with the food processor). Cover the dough and leave it to rise in the refrigerator overnight, if possible.
- The next day, divide the dough and make two long flat cakes from each piece on a floured surface.
The topping
- Quarter and peel apples, remove the core and chase away any residents. Dice the apple quarters. Peel the shallots and cut into fine rings. Crumble the cheese
The finish
- Spread the apple cubes and shallot rings on the flatbread and then crumble the crumbled cheese over them. No further seasoning is necessary, because the cheese is enough to give flavor. Herbs would only perish here.
- Bake in a preheated oven at 230 ° C on baking paper or foil for about 12 – 15 minutes.
- Note 8: You can of course process the dough after two to three hours if you are in a hurry, but there is a reason for the long dough. The flatbreads just get better. They are also very suitable for freezing. It is therefore advisable to make a larger amount.
