Spicy barbecue marinade

Ingredients for 4 servings:

  • 4 tsp, heaped tomato paste
  • 2 tbsp balsamic vinegar
  • 3 tsp vinegar (wine vinegar)
  • 1 tbsp honey or maple syrup or 2 tsp sugar
  • 4 tsp sweet paprika powder
  • 1 tsp chili powder or paprika powder, hot
  • possibly Sambal Oelek or Tabasco
  • Salt
  • 3 tbsp vegetable oil
  • some coriander, ground, if desired

Basic recipe

This recipe is for marinating a fresh pork neck steak or spare ribs. Preparing the marinade is quick and easy, with the advantage that you can coat fresh pieces of meat with it and thus know exactly what is hidden beneath the marinade. To prepare, mix tomato paste, balsamic vinegar, 2-3 teaspoons of wine vinegar, honey or maple syrup (or white or brown sugar), mild paprika, hot chili or hot paprika, and salt in a bowl. Taste and adjust to your own taste. If you like it a little spicier, you can add sambal oelek or a few drops of Tabasco from the bottle to taste. Finally, stir in the oil until all the ingredients are well combined. Or you can mix mild paprika, chili powder, a little ground coriander, and salt with 3-4 tablespoons of oil to create a marinade for a quick, slightly spicy, yet neutral-tasting barbecue marinade. Brush any piece of meat with the marinade on both sides and let it marinate in the refrigerator for at least 30 minutes, or longer. Then grill it on a hot grill or in a grill pan until crispy. Sprinkle with a little salt.
