Aloha's Flying Fried Chicken

Ingredients for 4 servings:

  • 1 m.-sized chicken
  • 2 garlic cloves, squeezed
  • 1 tsp mustard, medium hot or whatever you like
  • 1 tsp honey
  • 2 tbsp olive oil
  • some chicken seasoning
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Chicken with a twist – roasted in a bundt pan

Wash the roast chicken and pat dry. Season the chicken with chicken seasoning, salt, and pepper, including the inside. Preheat the oven to 200°C (fan). Make the marinade from the ingredients, including the salt/pepper and chicken seasoning, and brush the chicken inside and out. If using a Bundt pan, wrap the center section with aluminum foil and place the chicken on top. Roast the chicken on the lowest rack of the oven for 1 hour, brushing it with the marinade every now and then. This was served with baked potatoes, which had been basted with the drippings from the Bundt pan, and lamb’s lettuce.
