Spicy cauliflower

Ingredients for 4 servings:

  • 1 cauliflower
  • 6 spring onions
  • 4 cloves garlic
  • 1 tbsp oil (corn oil)
  • ½ tsp turmeric
  • 1 tsp coriander, ground
  • 1 tsp mustard seeds, yellow
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cut the cauliflower into small florets, wash, and blanch in boiling water for 5 minutes. Remove from the water. Clean and thinly slice the spring onions. Peel and finely chop the garlic cloves. Heat the corn oil in a wok or frying pan. Add the turmeric, ground coriander, mustard seeds, and garlic to the pan, stir, and cover (mustard seeds will burst and may jump out of the pan). Once the mustard seeds have burst, add the spring onions and cook for 2 minutes, stirring constantly. Season with salt and pepper. Add the cauliflower and stir for 3-4 minutes.
