Ingredients for 4 servings:

  • 225 g flour
  • 50 g ground almonds
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 3 drops of bitter almond flavor
  • 1 egg(s), including the yolk
  • 150 g butter
  • 200 g marzipan
  • 50 g sugar
  • 1 tbsp liqueur (almond liqueur)
  • 1 egg(s), including the yolk
  • 1 tbsp milk

Mix the flour with the ground almonds. Add the 75g of sugar, the vanilla sugar, the bitter almond flavoring, and the butter. Form a dough. Theoretically, refrigerate for 1 hour, but I used it straight away—it worked. Roll out the dough and cut out circles about half a centimeter and 5cm in diameter. Knead the marzipan, the 50g of sugar, and the tablespoon of almond liqueur, and form them into balls. Place these balls on the circles. Now comes the trick. Using your thumb and two fingers, pull the dough up into a triangular shape around the ball to form a kind of cap. If you hold your fingers as if you were swearing, this works quite well. It’s best to pick up the circle of dough from the table and place it in your other hand; this makes it easier than directly from the table. Finally, brush the caps with a mixture of one egg yolk and one tablespoon of milk. Bake for 15 minutes at 150°C in a preheated oven.
