Ingredients for 6 servings:

  • 6 chicken breast fillets
  • 1 tbsp seasoning mix (Cajun)
  • ½ tsp oregano, dried
  • 1 tsp paprika powder, sweet
  • 75 g flour
  • 500 g mushrooms, fresh
  • 2 bell peppers (e.g. red and green)
  • 3 stalks celery
  • 120 g butter
  • 4 tbsp olive oil
  • 2 garlic cloves
  • 1 gr. can/n tomatoes, pieces approx. 450 g
  • ½ tsp Tabasco
  • 1 tsp sugar
  • 250 ml water

Mix the Cajun seasoning, oregano, and paprika with the flour. Dust the fillets with the seasoned flour, reserving the remaining flour. Sauté the vegetables and mushrooms with the garlic in half the butter for about 6 minutes. Add the chopped tomatoes, Tabasco sauce, and sugar and simmer for about 10 minutes. Stir 2 tablespoons of the seasoned flour into the sauce, pour in 250 ml of water, and bring to a boil, stirring, until the sauce thickens. Add the oil and remaining butter to a pan and fry the fillets until crispy. Pour the sauce over the meat and serve. Serve with pasta, rice, and baguette.
