Spicy creamed spinach with onions and garlic

Ingredients for 4 servings:

  • 1 kg leaf spinach, fresh
  • 20 g butter
  • 1 tbsp flour
  • 1 small onion(s)
  • 1 garlic clove(s)
  • 150 ml cream or Cremefine
  • 150 ml milk
  • 1 tsp, heaped vegetable stock powder
  • Salt
  • nutmeg

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Wash the spinach thoroughly and tear into small pieces. Then blanch it in hot water for about 5 minutes. Remove from the heat and drain through a sieve. In a separate pan, fry the chopped onion and finely chopped garlic in the melted butter. When both are golden brown, add the spinach. After 1-2 minutes, add the flour and stir slowly. Deglaze with the milk and cream, add the vegetable stock powder and the remaining spices, and simmer for a bit longer. Season to taste and serve. Tastes great as a side dish and also with the classic boiled potatoes and fried eggs.
