Capellini with chili soy sauce

Cook the noodles in salted water as usual. Meanwhile, prepare the sauce. Simply combine the soy sauce, sriracha, and brown sugar in a small bowl. Stir the noodles occasionally, as the capellini tend to stick together. Melt the butter in a slightly deeper pan over low heat and add the pink peppercorns. Be careful, this dish will be very spicy. If you don’t like it too spicy, just use a little pepper. Whisk the egg and add it to the butter. Once the noodles are cooked, drain them and add them to the butter and egg. Sauté everything briefly, then pour over the soy chili sauce. Heat everything together briefly. Before serving, add some cilantro, spring onions, and peanuts to the noodles. I personally prefer them to be briefly fried as well; this softens the ingredients and imparts a bit more flavor to the noodles. If you prefer them fresh on the plate, you can add them afterward. A friend in America showed me this recipe.
