Spicy, Fruity Blueberry Goat Cheese Quinoa Salad

The perfect spicy, fruity blueberry goat cheese quinoa salad recipe with a picture and simple step-by-step instructions.

  • 200 g Quinoa-Buckwheat-Millet mix, cooked
  • 70 g Blueberries
  • 50 g Goat Feta Cheese
  • 1 tbsp Lemon juice or 1 teaspoon apple cider vinegar
  • 1 tsp Olive oil or any other oil
  • 1 Msp Honey to taste
  • Salt pepper
  • Chopped parsley to taste
  1. I spontaneously mixed the dish together, so I can only estimate the quantities. With the quinoa mix, simply fill a muesli bowl approx. 3/4 full. For the dressing, stir in oil, lemon juice and honey if necessary.
  2. Simply stir all the remaining ingredients and the dish is ready 🙂
  3. Roasted almonds also taste delicious. Sprinkle over it either whole or chopped. Also tastes good with cooked millet or buckwheat. With cheese you can also use feta or goat cream cheese. My cheese was packed like feta, but from the goat and not, as usual, from the sheep.
