Spicy gnocchi with goat's cheese

Ingredients for 2 servings:

  • 1 m.-sized carrot(s)
  • 1 m.-large fennel
  • 2 cloves garlic
  • 1 pepper, red
  • 1 pack of gnocchi for 2 people
  • 2 scoops of goat’s cheese
  • 1 piece(s) ginger, fresh
  • 1 piece(s) turmeric, fresh
  • some sunflower oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the carrot and cut into thin sticks. Wash the fennel and slice it. Sauté both in a little water in a separate pot. The vegetables should still have some bite. Peel and finely chop the garlic, ginger, and turmeric. Wash the chili peppers, remove the core and seeds, and cut the pepper into thin strips. Then lightly fry everything in sunflower oil. Add the gnocchi and cook according to the package instructions. Then break up the goat cheese balls a little and stir in the gnocchi. Finally, add the pre-sautéed vegetables and 2-3 tablespoons of the reserved stock to the gnocchi mixture, stir in, and season with salt and pepper.
