Gnocchi, ham and pureed vegetables

Ingredients for 3 servings:

  • 500 g gnocchi
  • 100 g ham
  • 3 pointed peppers, light
  • 3 carrots
  • 1 zucchini
  • 1 onion(s)
  • 200 ml milk
  • 200 ml cream
  • some water
  • 1 small chili pepper(s)
  • some parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

This recipe actually came about as a way to use up leftovers; I simply used up everything that needed to be used up. We enjoyed it so much, I wrote it down. Fry the gnocchi in a little oil or margarine in a pan until lightly browned. Transfer the gnocchi from the pan to a bowl. Cut the ham into not-too-large, slightly thicker slices and fry until crispy. Add it to the bowl with the gnocchi. Chop the vegetables—they don’t have to be particularly small, as they’ll be pureed—and lightly sauté them in the same pan. Then add a little water, the milk, and the cream (you can also omit the cream and use milk instead). Simmer for about 20-30 minutes. Puree well and season with salt and pepper. Chop the parsley and add it to the pan along with the ham and gnocchi. Stir. Done! Enjoy!
