Spicy herb omelet with goat cheese

Ingredients for 2 servings:

  • 2 eggs
  • 1 tbsp Italian herbs, frozen
  • 1 tbsp parsley, frozen
  • 50 ml milk, 0.1% fat content
  • 1 tbsp rapeseed oil
  • 1 pepper, red, hot
  • 4 spring onions
  • 250 g goat cheese, 50% fat, in brine, e.g. from Gazi
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Beat the eggs in a bowl until frothy, season with salt, pepper, herbs, and milk. Heat a little oil in a pan and briefly fry the spring onions and peppers. Pour the egg mixture into the pan and let it set over low heat. Turn the omelet once, crumble the goat cheese on top, and let it melt for 5 minutes. Cover the pan and keep the heat low. Fold the omelet over and serve.
