Ingredients for 5 servings:

  • 5 eggs
  • 2 tsp salt
  • 1 tsp, leveled pepper
  • 2 tsp nutmeg
  • Parsley
  • 500 g flour
  • 125 g butter
  • Vegetable broth, instant
  • 2 liters of water

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Whisk the eggs with the salt, pepper, parsley, and nutmeg in a bowl. Add half the flour and stir with a fork, as the dough will be too stiff to whisk. Briefly melt the butter in a saucepan and stir it into the dough. Add the rest of the flour and knead the dough well. Add more flour if desired until the dough is easy to knead. Put a pot of water on the stove, add the vegetable stock, and bring to a boil. If you have more time, you can also boil the vegetable stock fresh. In the meantime, you can form small dumplings from the dough. Reduce the heat to low and either add the dough to the broth in the form of dumplings, or tear off small pieces of dough and add them. Hence the name: the little pieces look like sponges. Let the soup simmer for another 5-10 minutes.
