Fried eggs in a bed of onions with sage

Ingredients for 3 servings:

  • 15 sage leaves
  • 200 g onion(s)
  • 2 tbsp clarified butter
  • 1 tbsp flour
  • 1 tsp sweet paprika powder
  • 6 eggs
  • pepper
  • Sea salt, fine

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them into thin rings. Heat 1 tablespoon of clarified butter in a pan. Briefly fry the sage leaves until crispy, remove them from the pan, and let them drain on kitchen paper. Heat the remaining clarified butter in the pan. Lightly dust the onion rings with flour and fry them in the pan over medium heat for about 10 minutes, turning occasionally. Season with salt and paprika. Crack the eggs one at a time onto the hot onions, stirring them slightly with a spoon so that the eggs sink to the bottom of the pan and absorb more heat. Cover and let the eggs set over medium heat. Remove from the heat and season with salt and pepper. Sprinkle the fried sage leaves on top. Serve with toasted farmhouse bread!
