Spicy Parsnip and Lentil Spread

- 250 g Parsnips
- 180 ml Vegetable broth
- 100 g Red or yellow lentils
- 3 tbsp Olive oil
- 1 tsp Dijon mustard
- 1 tsp Onion powder
- Salt pepper
- Lemon juice
- Chives or parsley
- Simmer the peeled and diced parsnips in the vegetable stock for about 10-15 minutes. Then drain. Just cover the lentils with water and simmer for about 10 minutes. Drain if there is any liquid left. Finely puree the parsnips and lentils with the other ingredients. Season with salt, pepper and lemon juice. Fold in chopped chives or parsley as desired.
- The dip tastes delicious with vegetable sticks or on bread. Also suitable as a base for wraps.
