Spicy pork fillet skewers

Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 2 tbsp lime juice
  • 1 ½ tsp cumin powder
  • 1 ½ tsp oregano
  • 1 tsp chili flakes
  • 1 tsp sea salt, coarse
  • ½ tsp pepper, freshly ground, black
  • 2 pork fillets, cut into 2 cm cubes

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 30 minutes

Mix the marinade ingredients together well. Place the meat in a zip-top freezer bag and add the marinade. Close the bag and mix the marinade thoroughly with the meat. This can be done by turning the bag over or using your hands from the outside. Marinate in the refrigerator for 8 hours or overnight. Then thread the meat pieces onto soaked wooden skewers. Grill the skewers over direct medium to high heat with the lid closed for 10 minutes, turning several times. The skewers should have clear grill marks on the outside. Serve with tzatziki and Greek salad. If you prefer it less spicy, you can of course reduce the amount of chili.
