Spicy tomato scrambled eggs

Ingredients for 1 servings:

  • 2 large eggs
  • 4 small vine tomatoes
  • 1 small shallot(s) or small onion, mild
  • some chives, chopped
  • 1 tbsp, heaped Parmesan, grated
  • 1 tbsp, heaped Ajvar, hot
  • 2 tsp sambal oelek, hot
  • salt and pepper
  • Paprika powder, hot
  • some olive oil or rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

for a savory breakfast

Dice the shallot and quarter the tomatoes. Add the oil to a pan and heat gently to combine. Season the eggs and the remaining ingredients with salt, pepper, and paprika, and whisk in a bowl until smooth. Pour this mixture over the tomatoes and shallots in the pan and let it simmer for about 5 minutes over medium heat. Depending on how spicy you want these scrambled eggs to be, you can of course spice them up with chili or something similar.
