Spicy tuna tartar

Ingredients for 4 servings:

  • 2 tsp, heaped ginger, fresh, finely chopped or grated
  • 100 ml vegetable oil
  • 400 g tuna, sushi quality
  • 2 tbsp coriander leaves, finely chopped
  • 1 chili pepper(s), pitted and finely chopped
  • 1 tbsp spring onion(s), finely chopped
  • 3 tsp lime juice
  • Sea salt
  • pepper
  • 1 tomato(s), peeled and pitted

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Asian style

The day before, marinate the ginger in oil and let it sit in the refrigerator. Cut the tuna into small cubes and place it in a cold bowl. Mix with the ginger pieces along with a tablespoon of coriander, the finely chopped chili pepper, the spring onion, 3 teaspoons of lime juice, and 4 teaspoons of ginger oil. Season with salt and pepper. Place in the center of the plates using serving rings. Drizzle the remaining ginger oil around the tartar, top with finely chopped tomato pieces, then the remaining coriander. Drizzle with lime juice.
