Spicy vegetable pan with chorizo

Ingredients for 4 servings:

  • 1 paprika sausage (chorizo)
  • 600 g potatoes, waxy
  • 300 g carrot(s)
  • salt water
  • 3 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 zucchini
  • 2 bell peppers
  • Paprika powder, hot
  • Paprika powder, sweet
  • salt and pepper
  • olive oil
  • 1 package of feta cheese

Peel the potatoes and cut into wedges. Peel the carrots and cut into slices about 1 cm thick. Cook the potatoes and carrots in salted water for about 5-10 minutes, then drain well and let cool. Dice the chorizo, the onion into rings, and the peppers into wedges. Dice the zucchini. Brown the sausage in a little olive oil until well browned. Crush the garlic. Then add the remaining vegetables to the pan. Season everything with salt and pepper (go easy on the pepper). Add a little paprika (hot) and season generously with sweet paprika. It should take on a nice red color, and the oil should also be reddish. Let the vegetables fry until they take on some color. Adjust seasoning if desired (to taste). Dice the feta cheese and add it to the pan. Cover and let the feta cheese melt slightly. Baguette is delicious with this.
